Forget the lemonade!! Make these instead!I have never thought much of blogging food, but hey there's always a first and these were yummy! Note** this is not a healthy recipe...at all!!! let's start with the Crust
For Crust:
1/2 lb. Unsalted Butter
1/2 C. Granulated Sugar
2 C. Flour
1/8 tsp. Salt
preheat oven to 350
Cream together butter and sugar until light with an electric mixer. Combine flour and salt and with mixer on low add to the butter just until mixed.
Dump dough onto a well floured surface and gather into a ball. Flatten dough with floured hands and press into a 9x13inch pan, building up a 1/2 inch edge on all sides. Chill (Not sure why you need to do this? Well I do know the answer for that!!it's called resting the dough, it will let the gluten "relax." Also, you want to get the fat globs cold again so that the pastry will remain flaky.I wonder if we rested then we would no longer be flaky, but that's just how my mind works anyway......) the recipe didn't say for how long so I left it for 10 min. then carried on with the instructions!
Soooo
Bake crust for 15-20 minutes until a very light brown. Let cool on a wire rack, Leave the oven on.
For Filling:
6 Large Eggs at room temp.
3 C. Sugar (told you not healthy....!)
2 TBS. Grated Lemon Zest
1 C. Freshly squeeezed lemon juice (6-8 lemons)
1 C. Flour (I suppose you could use wheat...but really at this point....)
Powdered Sugar, for dusting
Whisk together eggs, sugar, lemon zest, lemon juice, and flour. Pour over the crust and bake for 30-35 min. until the filling is set. Let cool to room temp. Cut into squares or triangles and dust with powder sugar!
