Mint Chocolate Slab
With a name that includes chocolate and slab....I think there is no question that it must be made and consumed!
I wouldn't normally post a recipe that I haven't made.....but I will make an exception this once! So here goes!
Prep 20min. let stand 1 hr.
**1 recipe tempered Chocolate**(see below) -or- 1 1/2 lb. chocolate flavored candy coating melted
15 miniature chocolate covered cream filled mint patties

15 miniature chocolate covered cream filled mint patties
(assorted candies and silver nonpareils)
Line an 11x7 baking pan with parchment paper, allowing edges to extend beyond the edges of the pan.
wipe off any water from bottom of bowl of the chocolate mixture pour half the tempered chocolate into pan; spread chocolate to edges of pan. Arrange peppermint patties in pan, leaving a 1inch border. Evenly spoon on remaining chocolate, spreading to cover candies. Top with additional assorted candies. Let stand at room temp until firm (about 1hr.)
Lift candy from pan with parchment. Cut or break into pieces (makes approx 60 pieces)
*Tempered Chocolate*
Chop 1 1/2 lb semisweet, bittersweet,dark, or milk chocolate
place in a 2 quart bowl with 1/4 cup shortening; stir to coat chocolate with shortening. Pour very warm water (110deg F) in a very large bowl to a depth of 1 inch. Place the bowl with chocolate inside the bowl of warm water (water should cover the bottom half of bowl of chocolate) Adjust the water level as needed (be VERY careful not to splash ANY water into chocolate )
Stir the chocolate mixture constantly with a rubber spatula until completely melted and smooth, this can take up to 25 min.When the water cools remove the bowl containing the chocolate. Discard the cool water and add warm and continue as above until all chocolate is melted.
Why temper chocolate?? So glad you asked!
Tempering chocolate ensures that the cocoa butter in the chocolate melts slowly. If melted too quickly or at too high of a temp. the chocolate will "bloom" (have white powdered look through it) when it sets up. Tempered chocolate keeps its shiny appearance and smooth texture after it cools and sets up!
Well I will be making this in the very near future and will post some pictures (no not of my waistline....) but of the results!!!

I have not made them yet. I will post the details for you. Actually you put peppermint patties (like york or jr. mints, pour chocolate over them. Then you press other types of chocolate mint in the top of the soft chocolate....you can use the after eights, or any other chocolate mint candy. a variety would look fun. I am thinking jr. mints, mint m&m's, the after 8's you just gently press them in. let it all harden then set out the "slab" for people to break off of themselves, or perhaps you break it up like bark & place on a plate! It looks really fun! I'm excited to try this one!
